Zesty Kale Yogurt Dip

 

Zesty Kale Yogurt Dip

3 tightly packed cups of chopped kale
1/4 cup fresh chopped basil
2 fresh garlic cloves (minced)
1 cup plain Greek yogurt
1/2 cup freshly grated Parmesan cheese (use FRESH)
1/2 cup finely diced green onions
1-1/2 teaspoons of your favorite all-purpose seasoning blend (I use Mrs. Dash ‘Table Blend’)
tiny drizzle of lemon juice
sea salt (to taste)

Combine all of the ingredients in a food processor and pulse until all ingredients are well blended and desired consistency is reached. I prefer it a little on the chunkier side, but you can make this as creamy or chunky as you desire. Serve with fresh cut veggies, torn pita bread or your favorite baked chips.
