Zesty Edamame Dip

 

Zesty Edamame Dip

1-1/2 cups shelled edamame
3 tablespoons fresh squeezed lemon juice
3 tablespoons water
1 tablespoon olive oil
1-2 fresh garlic cloves (minced)
1/2 teaspoon ground cumin
1/2 teaspoon salt
dash of black pepper

Steam edamame. Drain and rinse. Transfer steamed edamame into a blender or food processor along with the lemon juice, 3 tablespoons of water and pulse until coarsely chopped. Add in the remaining ingredients and process until mixture is smooth and creamy. Serve with your favorite cut veggies, crackers or pita chips for a healthy and tasty dip. Makes approximately 1 cup.
