Warming Winter Kale Vegetable Soup
1 sweet onion (diced)
4-5 fresh garlic cloves (minced)
5 cups vegetable broth OR tomato juice
1 cup thinly sliced carrots
1 cup diced celery
2 large sized red or blue potatoes (diced – leave peel on ONLY if organic)
3 cups chopped kale (stems and ribs removed before chopping)
2-1/2 teaspoons dried sage
2-1/2 teaspoons dried thyme
sea salt and black pepper (to taste)
Heat 2 tablespoons of the vegetable broth in a large saucepan over medium heat. Add in the diced onion and saute until tender, about 4 minutes. Add in another tablespoon of the vegetable broth along with the minced garlic and saute until fragrant, about 1 minute.
Add in the remaining vegetable broth, diced carrots and diced celery and bring to a boil over medium heat. Immediately reduce heat and let simmer for 5-7 minutes. Add in the diced potatoes, chopped kale and seasonings and continue to cook at a simmer until potatoes are tender, about 15-20 minutes. Taste and adjust seasonings as desired and serve with a nice crusted bread for a warming soup meal during the cooler weather months. Makes 4 servings.
* You can also toss in any leftover veggie you may have in the fridge to make this soup even heartier.
