Veggie Shooters with Chickpea Garlic Dip

 

Veggie Shooters with Chickpea Garlic Dip

2 cups cooked chickpeas

1 Tbsp fresh lemon juice –

5-6 minced garlic cloves –

1/4 C vegetable broth –

3 Tbsp olive oil

sea salt & pepper to taste

julienne sliced veggies

Combine all ingredients in a food processor or blender and blend until smooth. Spoon about 1 Tablespoon of the chickpea dip into the bottom of small-wide shot glasses (or something similar) and arrange some julienne sliced veggies upright into the dip.  Dip may be made up to 2 days ahead of time.
