Vegan Peanut Butter Pie

 

Vegan Peanut Butter PieĀ 

1 container firm tofu (approx 12 oz)

1/2 cup vegan chocolate chips

1/2 cup peanut butter

2 Tbsps non-dairy milk

1 pre-made pie crust

Melt chocolate chips over low heat, stirring frequently so chocolate doesn’t burn. Use a double boiler if you have one. Once melted, combine together the peanut butter, silken tofu, melted chocolate & non-dairy milk in a blender, and blend until smooth, adding a bit more non-dairy milk if necessary. Pour into pie crust & chill at least 3 hrs.
