Sweet Potato Linguine
1-2 sweet potatoes
1-2 Tbsp butter
Sea salt & freshly ground pepper to taste
Peel potatoes then slice lengthwise as thinly as possible using a mandolin slicer (Note: a potato peeler will not result in thin enough slices) Cut into even strips about 1/4 inch wide. Melt butter in a skillet over medium heat. Add in the sweet potato linguine strips and stir and toss for about 3-5 minutes. When tender & warmed through, season with sea salt black pepper. Arrange on a serving plate and top with an optional garnish of dried sage.
