St Patty’s Day Potatoes and Cabbage

5 large potatoes

1 head green cabbage, chopped

3 leeks, sliced

1 cup milk (regular or non-dairy)

1/4 tsp nutmeg

sea salt & pepper

Boil peeled potatoes in a pot of salted water until potatoes are tender. In a separate pot, boil the cabbage in salted water for 15 minutes. Drain & set aside. In a 3’rd pot, cook leeks in the 1 cup milk until tender, about 15 minutes. When potatoes are done cooking, mash well with the milk-cooked leeks. Lastly, stir in the cooked cabbage, season with sea salt & pepper to taste and serve.
