Spring Pea Salad

 

Spring Pea Salad

2 cups green peas

1/2 cup diced celery

2 Tbsp diced red onion

2 Tbsp mayonnaise (regular or vegan)

1/2 C raisins

2 Tbsps sour cream

1 tsp chopped fresh dill or parsley

1 Tbsp raw sugar

Combine all the ingredients in a medium bowl, stirring until all ingredients are well blended. Chill in fridge for a minimum of 2-3 hours before serving.  Season with sea salt & pepper as desired, and serve. Makes 4-6 servings
