Simple Tomato Rice Soup
*This is a great way to use leftover cooked rice, and is ready in 15-20 minutes.
1-1/2 tablespoons olive oil
2 tablespoons all-purpose flour (regular or gluten-free)
1 large onion (diced)
4 cups tomato sauce
2 cups cooked leftover rice
sea salt and black pepper (to taste)
*optional add-in: Italian spice blend
Heat the olive oil in a large saucepan over medium heat. Whisk in the flour and continue whisking until flour becomes lightly browned. Add in the diced onion and tomato sauce, reduce heat and simmer for 12-15 minutes. Stir in the cooked rice, sea salt and black pepper, increase heat slightly and cook until soup is heated through. *If you are adding in the Italian spice blend, add it at this time. Serves well with warm bread, pita chips or bread, or as-is. Makes 4 servings.
