Shiitake Mushroom Pate

 

Shiitake Mushroom Pate

1 tablespoon olive oil
1 cup finely diced yellow onion
1-2 fresh garlic cloves (minced)
4 cups fresh shiitake mushrooms (rough chopped)
1 teaspoon Braggs liquid aminos (you may also use Tamari)
1 teaspoon savory
1/2 teaspoon dried thyme
1/4 teaspoon nutmeg
1/8 teaspoon black pepper
pinch of sea salt
1 tablespoon finely minced chives

Heat the oil in a skillet over medium heat. Add in the onions and saute until they become translucent, about 4-5 minutes. Add in the minced garlic and saute while stirring continuously until it becomes fragrant, about 1 minute. Stir in the chopped shiitake, reduce heat to low and cook for 5 minutes while stirring frequently. Add in all of the remaining ingredients, except for the minced chives, and continue cooking over low heat for an additional 10 minutes. Remove from heat and allow mixture to cool slightly. Spoon mixture into a blender or food processor and puree until smooth. Transfer into a serving bowl and stir in the minced chives. Serve immediately warm, or keep pate chilled in the fridge until ready to serve with your favorite crackers or veggie crudites.
