3 cups vanilla coconut ice cream
1 3/4 cups coconut milk
1/4 tsp peppermint extract
Several drops green food coloring
Whip cream (for garnish)
Shamrock sprinkles (for garnish)
Blend all ingredients in a blender until completely thick and smooth. Pour into shooter glasses (or 4 festive shaped glasses) & top with whipped cream & sprinkles.
