Sauteed Swiss Chard and Onions
4 tablespoons olive oil
2 large yellow onions (rough chopped or rough sliced)
1 pound of Swiss Chard (stems removed and chopped)
1 heaping tablespoon raw honey OR raw agave nectar
1 teaspoon caraway seeds
1/4 teaspoon celery seed
1/2 teaspoon black pepper
2 teaspoons red wine vinegar
Heat the olive oil in a large, deep skillet over medium heat. Make sure the pan and oil are very hot before adding in the onions, and using tongs toss to evenly coat all the onions with the oil. Saute with stirring frequently until the onions become soft and brown, about 10-12 minutes. Midway through the cooking time, as the onions reduce, sprinkle liberally with some sea salt.
Once the onions are done, add in the chopped Swiss Chard and toss and work with the tongs as the Swiss Chard starts to wilt. As soon as the Swiss Chard is evenly wilted, stir in the raw honey, caraway seeds, celery seeds and black pepper and saute while continuously tossing for an additional 2 minutes. Transfer into a large serving dish, and evenly drizzle with the red wine vinegar right before serving. Makes 4 servings.
