Rustic Apple Cider Roasted Root Vegetables

 

Rustic Apple Cider Roasted Root Vegetables
(preheat oven to 400 degrees)

(dressing)
1/4 cup apple cider vinegar (do not use white vinegar)
1 cup apple cider (do not use apple juice)
1/4 cup olive oil
4-5 fresh garlic cloves (minced)
2 tablespoons raw honey (vegetarian) OR raw agave nectar (vegan)
1 tablespoon brown mustard
2 tablespoons Italian seasoning blend
sea salt and pepper (to taste)

(vegetable mixture)
1 cup rough diced carrots
1 cup rough diced sweet potatoes
1 cup rough diced red potatoes
1 cup rough diced celery
1 cup rough diced red onions
1 cup chopped rough chopped winter squash
a couple sprigs of fresh rosemary

In a large mixing bowl, whisk together all of the dressing ingredients until well combined. Add in the vegetable mixture ingredients and toss to evenly coat and blend all ingredients. Transfer mixture into a 9×13 inch baking dish. Roast on center oven rack for 45-50 minutes, and give the vegetables a thorough stir every 15 minutes. Remove from oven, pull out the 2 rosemary sprigs and let stand for 5 minutes before serving. Makes 6-8 servings.
