Roasted Sweet Potato with Curried Yogurt Sauce
(preheat oven to 350 degrees)
Cut 2 large sweet potatoes in half and bake on cookie sheet on center oven rack 45-50 minutes, or until fork tender.
In a mixing bowl, whisk together 1/2 cup of plain yogurt with 1 tsp curry powder & 2-3 drops of hot sauce. Remove potatoes from oven, drizzle some curried yogurt sauce across the top of each potato half and serve with a fresh lime wedge. (makes 4 servings)
