Raw Spring Pea Soup

 

Raw Spring Pea Soup

2 cups fresh peas (divided)

1 large avocado (peeled, pitted and rough chopped)

1-1/2 cups raw nut milk (almond or cashew work well)

1 small yellow onion (rough chopped – reserve a spoonful of finely diced pieces)

1 teaspoon sea salt

1/2 teaspoon black pepper

 

Set aside 1/2 cup of the fresh peas. Combine the remaining peas, along with the raw nut milk, onion, sea salt and pepper into a blender and blend or puree until soup has a smooth consistency. Transfer into serving bowls and evenly top each bowl with there served peas and diced onion pieces.
