Raw Mexicana Soup
8 firm roma tomatoes, rough chopped
1/4 of a red onion, rough chopped
2 large carrots, rough chopped
3 large celery stalks, rough chopped
1/4 of a jalapeno pepper, seeded and rough chopped
handful of fresh cilantro
1/2 cup water
generous squeeze of fresh lime juice
1 teaspoon Mexican seasoning spice blend (I use Mrs Dash’s ‘Fiesta Lime’ dehydrated seasoning blend) – you can also add in individual spices such as cumin, chili powder and garlic powder.
* you can add an optional garnish of fresh diced avocado
Combine all ingredients in a blender and blend or pulse to desired consistency. You can puree this to a smooth soup, or pulse it for a chunkier soup consistency. Pour into a bowl, season with sea salt and black pepper as desired and enjoy. Serves well with some raw, dehydrated chips or crackers.
