Raw Mediterranean Salad
2 cups diced tomatoes
1 cup diced cucumbers
1/2 cup diced red onions
1/2 cup diced bell pepper (any color or combination)
extra-virgin olive oil
sea salt and black pepper to taste
*Optional add-ins: fresh chopped parsley or cilantro.
Combine the diced vegetables in a mixing bowl and toss to combine. Drizzle in the olive oil and balsamic vinegar to taste. Season with sea salt and black pepper to taste and serve. This raw salad serves well at room temperature or chilled.
