Raw Mashed Poatoes with Mushroom Gravy

 

Raw Mashed Potatoes

6 cups of chopped cauliflower florets

1/2  cup raw pine nuts

2 tablespoons olive oil

2 tablespoons cold water

1-1/2 teaspoons sea salt

1/2 teaspoon black pepper

2 fresh garlic cloves, rough chopped

large pinch of fresh dill

Mushroom Gravy

2/3 cup extra virgin olive oil
1-1/2 cups sliced mushrooms (any variety will work, but crimini, mini-Portobello and shiitake mushrooms will taste the best)
2/3 cup of water
1  tablespoon apple cider vinegar
2-3 cloves garlic, minced
1 teaspoon sea salt

To make the ‘potatoes’ combine all ingredients into a high powered blender or food processor and blend until mixture is smooth and creamy. Transfer into a serving bowl, adjust seasonings as desired.

To make the mushroom gravy, combine all of the gravy ingredients into a high powered blender or food processor and blend until mixture reaches desired consistency. Serve alongside your raw mashed potatoes.
