Raw Jicama Salad

 

Raw Jicama Salad

1 large jicama

1/2 of EACH red, orange and green bell pepper (diced or cut into julienne slices)

1/2 cup thinly sliced red onion (slice into thin half rings)

1/2 of a large cucumber (peeled and diced)

1 large orange (peeled, sliced into thin rounds and then each round slice quartered)

1/2 cup fresh chopped cilantro

1/3 cup fresh squeezed lime juice

pinch of cayenne powder

pinch of paprika

sea salt

Cut the jicama in half. Peel and then either cut into dices or julienne slices. In a large mixing bowl, whisk together the lime juice, cayenne, paprika and sea salt. Add in the jicama and all the remaining ingredients and toss to evenly coat. Let salad marinate for 1 hour to allow flavors to build (either in the fridge or at room temperature) before serving.
