Raw Apple Ginger Salsa

2 red variety apples (finely diced)

1 small sweet onion (finely diced)

1/4 cup lime juice

2 tablespoons finely minced fresh ginger root

2 teaspoons finely minced jalapeno pepper

2 tablespoons fresh chopped cilantro

sea salt and pepper (to taste)

Combine all of the ingredients in a mixing bowl and toss evenly coat and blend.  Cover and chill in fridge for 1-2 hours to allow flavors to build before serving.  Serve with your favorite raw seed crackers or use as a topping or accompaniment for your favorite raw, vegan or vegetarian dishes.
