Fresh and Healthy Cold Quinoa Tabboulah

 

Fresh and Healthy Cold Quinoa Tabbouleh

2 cups water
1 cup dry quinoa
1/4 cup olive oil
1/2 teaspoon sea salt
1/4 cup fresh squeezed lemon juice
3 Roma tomatoes (diced)
1 medium sized cucumber (diced)
1 bunch of green onions (diced)
2 large carrots (grated)
1 cup fresh chopped parsley

Combine the 2 cups of water and 1 cup of quinoa in a saucepan over medium heat and bring to a low boil. Immediately reduce heat to low, cover and simmer for 15 minutes. Remove from heat and allow quinoa to cool to room temperature. Once the quinoa has cooled, use a large fork to fluff up the quinoa. While the quinoa is cooling, combine all the remaining ingredients in a large mixing bowl and stir to blend. Add in the cooled, fork-fluffed quinoa and toss to evenly incorporate all the ingredients. Makes 4 servings. *You can serve this immediately at room temperature, or keep it chilled in the fridge until ready to serve.
