Pineapple Ginger “Lemonade”
1 whole fresh pineapple (cored and diced)
1/2 to 1 inch piece of fresh ginger root (grated)
2 tablespoons FRESH squeezed lemon juice
3 tablespoons RAW honey (do not use commercially processed honey)
3 cups filtered water
Combine all of the ingredients into a blender and puree until smooth. Pour into ice-filled glasses and serve with an optional garnish of fresh pineapple or lemon wedge. Makes approximately 6 servings, depending on size of pineapple.
