Pineapple and Green Chili Fried Rice and Beans

3-4 tablespoons olive oil
4 fresh garlic cloves (minced)
1/2 cup cooked black beans
1/2 cup fine diced red bell pepper
1/4 cup green peas
3 cups cooked white rice (I like to use Basmati for this recipe)
1/2 cup fine diced pineapple
1 tablespoon Braggs liquid aminos (may also use Tamari or regular soy sauce)
1/2 teaspoon ground turmeric
4 green chiles (finely diced)

* fine diced green onion for garnish

Have all your ingredients ready and assembled next to your cooking station. Heat the olive oil in a wok or large skillet over medium-high heat. Once the oil is hot, add in the garlic, beans, red bell pepper and green peas and stir continuously while stir-frying for 2-3 minutes. Add in the cooked rice and pineapple and cook for an additional 3-5 minutes. Stir in the liquid aminos (or Tamari, or soy sauce), ground turmeric and diced green chiles and stir continuously while cooking for an additional 2-3 minutes. Serve with a sprinkle of finely diced green onions. Makes 2 servings as a main dish, or 4-6 servings as a side dish.
