Overnight Mason Jar Salsa

 

Overnight Mason Jar Salsa

5 vine-ripe tomatoes (diced – more or less, depending on size)
1 small red onion (finely diced)
1/2 of a large green pepper (finely diced)
2 jalapeno peppers (finely diced WITH their seeds)
1-2 fresh garlic cloves (finely minced)
2 tablespoons fresh squeezed lime juice
1/2 cup chopped fresh cilantro

Combine all of the ingredients in a mixing bowl and stir until well combined. Spoon into a mason jar, cover with a lid, and place in the fridge overnight (or at least 8-10 hours) before serving with your favorite chips or Mexican-inspired dishes.
