No Bake Trail Mix Protein Balls


No-Bake Trail Mix Protein Balls
(line a large cookie sheet with parchment paper)

4 cups puffed rice or millet cereal (unsweetened)
2/3 cup raisins (dark or golden)
2/3 cup dried cranberries or blueberries
1/2 cup finely chopped nuts (any variety)
1/2 cup pumpkin seeds (preferably raw)
1/2 cup sunflower seeds (preferably raw)
1 cup smooth, natural nut butter (any variety)
1 cup brown rice syrup
1-2 teaspoons pure vanilla extract
pinch of sea salt

In a medium bowl, stir together the puffed cereal, raisins, dried cranberries, chopped nuts, pumpkin seeds and sunflower seeds and set aside.

In a small saucepan, combine the nut butter and brown rice syrup. Cook over low heat for 1 to 2 minutes, stirring frequently until warm and bubbly. Remove from heat and stir in the vanilla extract and sea salt. Immediately pour syrup mixture into the bowl with the other ingredients and continue stirring until thoroughly coated and evenly blended.

Allow mixture to cool slightly and then using lightly oiled hands, shape the mixture into tightly packed balls and transfer onto your parchment lined cookie sheet and allow to cool at room temperature. Keep stored in a tightly sealed container once the protein balls have thoroughly cooled and set. Makes approximately 32-38 pieces.
