No-Bake Chocolate Almond Coconut Cookies
1/2 cup coconut butter (do not substitute with coconut oil, you need the thicker consistency of coconut butter)
2/3 cup raw agave nectar (may substitute with equal amount of raw honey)
2 tablespoons cocoa powder (unsweetened)
1 teaspoon pure vanilla extract
1 cup finely shredded coconut (regular or toasted)
1/4 cup finely chopped almonds
Combine the coconut butter and agave nectar in a saucepan over medium-low heat (no higher), and stir continuously until melted together. Whisk in the cocoa powder and vanilla extract until the cocoa powder is melted before stirring in the finely shredded coconut and finely chopped almonds. Remove from heat and shape the mixture by spoonfuls onto a parchment-lined cookie sheet and chill in the fridge until set.
