Mediterranean Chickpea Salad

 

Mediterranean Chickpea Salad

1-1/2 cans (15 ounces each) chickpeas (rinsed & drained)

2/3 cup diced red onion

4 fresh garlic cloves (finely minced)

1-2 large, firm tomato (diced)

3 large celery stalks (finely diced)

3 tablespoons freshly-squeezed lemon juice

2-1/2 tablespoons finely chopped fresh mint

3 tablespoons finely chopped fresh parsley

extra virgin olive oil to taste

sea salt & black pepper to taste

*optional: 1/2 cup crumbled vegan cheese

 

Combine all ingredients in a large mixing bowl, and toss until all ingredients are well blended and evenly coated. Serve immediately, or keep chilled in fridge until ready to serve.
