Italian Veggie Burgers

 

Italian Veggie Burgers

2 cans (15 ounces each) chickpeas/garbanzo beans (rinsed and thoroughly drained)
1 red onion (diced)
6 fresh garlic cloves (minced)
1/2 cup finely diced red bell pepper
1/3 cup finely chopped kalamata olives
1 jar marinated artichokes (drained and finely chopped)
2 cups finely chopped fresh spinach
1/2 cup rolled oats
1/2 teaspoon dried oregano
1/4 teaspoon sea salt
1/4 teaspoon black pepper
1/2 cup breadcrumbs (regular or Italian seasoned)

In a large mixing bowl, mash up the drained chickpeas using a potato masher. Add in all the remaining ingredients and work the mixture with a spatula and your hands, to evenly mix and combine all the ingredients together.

Using your hands, form the mixture into burger patties – makes 4 extra large burgers or 6 regular sized burgers. Be sure to pack the burgers very tight, to help them hold their shape. Heat a thin layer of olive oil in a large skillet, over medium heat. Once the oil is hot (do not add the burgers to unheated oil), arrange the veggie burgers into the skillet and fry for about 5 minutes on each side, until they are cooked and are golden brown. Serve with your favorite bun and veggie burger toppings. Makes 4-6 veggie burgers, depending on size.
