Italian Iced Coffee Floats
3 cups STRONG brewed fresh coffee (well chilled)
1 cup half-and-half (you may substitute with coconut cream, for non-dairy option)
6 small scoops of non-dairy vanilla ice-cream (I like to use coconut ice-cream)
whipped cream (optional)
Stir together the chilled brewed coffee and half-and-half (or coconut cream) until well blended. Pour evenly into 6 tall ice-filled glasses. You want to fill each glass 1/2 to 3/4 of the way full. Top each with some club soda, followed by a small scoop of non-dairy ice-cream and a dollop of whipped cream. Serve with a straw and a long handle spoon. Makes 6 servings.
* These are typically sweet enough for me as-is, but if you prefer your coffee floats even sweeter, just stir in a teaspoon of raw sugar or a pinch of stevia, to desired sweetness.
