1 ripe banana (peeled, diced and set in freezer for about 15-30 minutes)
1 cup fresh diced pineapple (if using canned, rinse and drain very well first)
1 cup plain coconut milk
2 teaspoons raw honey (do not use commercially processed honey)
about 1/4 cup of ice
* fresh pineapple and/or whipped cream for garnish (optional)
Combine all of the ingredients into a blender and puree until smooth. Pour into a pretty glass and serve with an optional garnish of fresh pineapple and/or whipped cream. Makes 2 servings.
* This is an alcohol-free smoothie, but you could certainly add in some rum for a delicious summer cocktail.
