Iced Spiced Pumpkin Coffee

Iced Spiced Pumpkin Coffee

1-1/2 cups non-dairy milk

slightly shy 1/2 cup pumpkin puree

2 tablespoons real maple syrup (any grade)

1 teaspoon ground cinnamon

generous pinch of ground ginger

small pinch of nutmeg

small pinch of ground cloves

1 cup strong brewed coffee – cooled (a great way to use leftover brewed coffee)


Combine all of the ingredients EXCEPT for the brewed coffee and ice into a blender and blend until all ingredients are well combined and mixture is slightly frothy. Fill 2 glasses with ice. Pour 1/2 cup of the brewed coffee into each glass and then top each glass with the spiced pumpkin mixture. Stir to blend and serve with an optional garnish of ground cinnamon. Makes 2 servings.
