Hot Vegan Bean Dip

 

Hot Vegan Bean Dip

2 cups spicy refried beans

2 cups of your favorite salsa

4 scallions, thinly sliced

1-1/2 cups grated vegan cheese

Combine the beans and salsa in a saucepan over medium heat, and stir while heating. If the beans are too thick and clumpy, add in a drizzle of water to loosen, but let the mixture remain thick. Heat until mixture is hot & bubbly. Remove from heat and pour half of the bean mixture to a serving bowl. Sprinkle with half of the scallions & half of the vegan cheese. Pour in the rest of bean mixture and remaining scallions and vegan cheese. Cover and keep warm until serving, either in your oven on a low temperature setting, or in a crock pot or on a heat plate. Serve with your favorite vegan chips, crackers, pita bread or veggies. Or, serve it as side with your favorite vegan Mexican dish.
