Herbed Potato Salad

1/2 pound fresh cooked peas

8 small new potatoes- boiled until medium-soft, and then cut into quarters

1/2 onion, sliced into thin half rings

3 Tbsps olive oil

2 Tbsps fresh basil

2 Tbsps fresh sage

2 Tbsps fresh chives

1 Tbsp fresh parsley

sea salt & pepper to taste

In a mixing bowl, whisk together the olive oil and all the herbs. Add in the cooked peas, cooked/quartered potatoes, and onion. Toss to combine. Add sea salt & pepper to taste and serve. (Optional add ins: cooked/drained red cabbage)
