Herb Baked Tomatoes

4 large, firm tomatoes

sea salt & black pepper

4 tsp melted butter (regular or vegan)

3/4 cup breadcrumbs (plain or seasoned)

1/4 cup Parmesan cheese

2 Tbsp chopped chives

1 tsp dried basil

Preheat the oven to 350°F – Cut tomatoes in half and place them face up on an very lightly greased baking sheet. Sprinkle evenly with sea salt & pepper. In a mixing bowl, whisk together the remaining ingredients & spread a spoonful of the mixture onto the top of each tomato. Bake 15-20 minutes, or until tops are golden brown.
