Greek Tomato Orzo

 

Greek Tomato Orzo

1 pound box/bag of orzo pasta

2 pints fresh cherry tomatoes (cut into halves)

1 large cucumber (peeled and cut into small diced sized pieces)

3 green onion spears (diced)

2 tablespoons dried oregano

handful of pine nuts

1/4 cup olive oil (or more to taste)

juice from 1 large lemon

sea salt and black pepper, to taste

8 ounces of crumbled Feta cheese (optional)

In a large pot of salted water cook theĀ  orzo pasta to al dente’, drain, rinse and drain again. Transfer the pasta into a large mixing bowl and add in all the remaining ingredients and toss until everything is evenly and well blended. Adjust any seasonings as desired and serve.
