Gluten Free Flourless Chocolate Chip Cookies
2-1/2 cups powdered sugar
1/2 cup cocoa powder (unsweetened)
1/2 teaspoon ground cinnamon
1/4 teaspoon sea salt
3 large egg whites
1 teaspoon pure vanilla extract
2-1/2 cups semisweet or dark chocolate chips
Preheat oven to 350 degrees and line 2-3 large baking sheets with parchment paper.
In a mixing bowl SIFT together the powdered sugar, cocoa powder, cinnamon, and sea salt. Stir in the egg whites, and then using a hand mixer, beat mixture on low speed until the batter is well blended. Lastly, stir in the vanilla extract and chocolate chips by hand. The batter will look a little ‘off’ due to it not having any flour in it.
Drop batter by spoonfuls onto your parchment lined baking sheets, about 1 inch apart. They will spread a bit. Bake until the cookies are cracking on the surface, about 12-15 minutes. Remove from oven and let the cookies cool for 5-7 minutes on the baking sheets, before carefully removing and transferring to a wire rack to cool fully. Makes approximately 40-48 cookies depending on size.
