Gluten Free Apple Cinnamon Quick Bread

 

Gluten Free Apple Cinnamon Quick Bread 
(preheat oven to 350 degrees and lightly oil and flour a loaf pan)

1-1/2 cups gluten-free, all-purpose flour
1/2 cup coconut sugar (may also use raw sugar)
2 teaspoons ground cinnamon
1 teaspoon baking soda
pinch of sea salt
1 cup applesauce (unsweetened)
1 whole egg (room temperature, well beaten)
1/3 cup melted butter
2 cups peeled and finely diced apples (any green variety)

Whisk together the flour, coconut sugar, ground cinnamon, baking soda and sea salt in a large mixing bowl until well blended. In a separate mixing bowl, whisk together the applesauce, egg and melted butter. Pour the wet ingredient mixture into the bowl with the dry ingredient mixture and stir until all ingredients are moistened and well combined, but do not over-stir. Pour batter into your prepared loaf pan. Bake on center oven rack for 45-60 minutes, or until toothpick comes out clean from center. Remove from oven and let the bread rest for 10-15 minutes in the pan. Remove bread from pan and transfer to a wire rack to fully cool. Makes 1 loaf.
