Garlic and Lemon Broccoli Saute
1 bunch of broccoli (cut into small florets – leaving a slight stem)
3 tablespoons olive oil
1 small onion (diced)
3-4 fresh garlic cloves (minced)
1/4 cup freshly squeezed lemon juice
sea salt and black pepper (to taste)
Bring a pot of salted water to a boil. Drop in the broccoli florets and boil until BARELY fork tender. Drain and pat dry any excess water with paper towels.
Heat the olive oil in a large skillet over medium heat. Add in the diced onion and saute until translucent, about 4-5 minutes. Stir in the minced garlic and cook until fragrant while stirring continuously to prevent burning, about 1 minute. Lastly, add in the lemon juice along with sea salt and black pepper to taste and cook for a final 3-4 minutes or until thoroughly heated through. Remove from heat and serve as a side dish, or over a bowl of freshly steamed rice for a healthy vegan broccoli rice bowl meal. Makes 4-6 servings.
