Fresh and Easy Avocado Salad

1 large, ripe beefsteak tomato (sliced)
1/4 of an onion (cut into thin half ring slices)
1 large, ripe avocado (peeled, pitted and cut into wedges)
1-2 tablespoons fresh cilantro

olive oil (to drizzle)
juice from 1/2 of a fresh lemon
sea salt and black pepper (to taste)

This quick & easy salad is a go-to favorite of mine, especially during the insanely hot summer days here in Phoenix. Simply arrange the tomato slices onto a single serving plate, followed by the sliced onion, avocado wedges and fresh cilantro. Drizzle with olive oil to taste and squeeze the juice of the halved fresh lemon across the top. Season with sea salt and black pepper to taste and enjoy! Makes 1 serving.
