Vegan Meatballs


Easy Vegan Meatballs

2 tablespoons olive oil
1 large yellow onion, diced
3 garlic cloves, minced
1-1/2 cups finely chopped walnuts
1-1/2 cups cooked brown rice
2 teaspoons fresh chopped parsley
1 teaspoon dried basil
1/2 teaspoon dried oregano
1/4 teaspoon dried sage
1/4 teaspoon chipotle powder
1/2 teaspoon sea salt
2 tablespoons chickpea flour

Preheat oven to 375 degrees and line a large cookie sheet with parchment paper.

Heat the olive oil in a large skillet over medium heat. Add in the diced onion and garlic and sauté until onions are translucent, about 5 minutes. In a food processor, combine remaining ingredients and blend/pulse until almost smooth. Add in the onion-garlic mixture and pulse until combined.

Scoop out the meatball mixture by tablespoon and shape by hand into balls, and place on your parchment lined cookie sheet. Bake for 30 to 35 minutes until tops of meatballs are browned. Remove from oven and serve. Your vegan meatballs can be served over steamed rice, sauteed veggies, in a ‘meatball’ sandwich, or even as an appetizer.
