Easy Tabouli Salad

 

Easy Tabouli Salad

1 cup wheat bulgur (dry measurement)
1/2 of a red onion OR about 6-8 green onion spears (finely diced)
2 fresh garlic cloves (minced)
3 cups fresh parsley (finely chopped)
1 tomato (diced)
3 tablespoons olive oil (or more, if desired)
1 tablespoon fresh squeezed lemon juice (or more, if desired)
sea salt and black pepper (to taste)

Place the bulgur in a large heat safe bowl and pour in 2 cups of BOILING water. Give it a good stir and then let it stand for about 20 minutes until the liquid is absorbed. Once all of the liquid is absorbed and the bulgur has cooled, add in all of the remaining ingredients and toss well to evenly combine. Serve immediately or keep chilled in the fridge until ready to serve. Makes 4 servings.
