Easy Sweet and Spicy Black Bean and Mango Salad

 

Easy Sweet and Spicy Black Bean and Mango Salad

1 can (15.5 ounce) black beans (rinsed and thoroughly drained)

2 cups diced mango

1 cup diced red bell pepper

6-8 large green onion stalks (diced)

1/4 cup fresh chopped cilantro

1/4 cup lime juice

1 tablespoon olive oil

1 jalapeno pepper (seeded and finely diced OR you can substitute with desired amount of your favorite hot sauce)

sea salt (to taste)

Add all of the ingredients into a large mixing bowl and toss until evenly coated and well combined.  Serve immediately, or chill in fridge until ready to serve.  Makes 4 servings as a side salad, or 2 servings as a main dish salad.
