Easy Pumpkin Pie Shake

2 cups plain Greek style yogurt

1 teaspoon pure vanilla extract

1 cup plain non-dairy milk

2/3 of a can (15 ounce) pumpkin puree

1/4 cup raw sugar (may substitute with coconut sugar)

3/4 teaspoon pumpkin pie spice (plus extract for garnish)

*Optional garnish of fresh whipped cream

Place all the ingredients into a blender and puree until smooth. Place blender container in the freezer, and freeze for 1 hour. Remove container from freezer and re-blend for 30-40 seconds. Spoon into 4 small serving glasses or 2 large serving glasses and top with an optional garnish of fresh whipped cream and a sprinkle of pumpkin pie spice. *Small almond or vanilla cookies also make a nice garnish to the shake. Makes 2-4 servings, depending on serving size.
