Easy Key Lime Pie

 

Easy Key Lime Pie
(preheat oven to 350 degrees)

2 packages (8 ounces each) cream cheese (regular or vegan – softened to room temperature)
1 cup raw sugar
1 teaspoon pure vanilla extract
1/4 cup lime juice
2 teaspoons fresh grated lime zest
2 tablespoons cornstarch
pinch of sea salt
1 pre-made graham cracker pie crust (plain or chocolate)

* optional garnishes: fresh whipped cream; thin lime slices; fresh lime zest

Combine all of the ingredients into a blender or food processor and blend until mixture is smooth and creamy. Pour filling mixture into the pre-made pie crust and place on top of a cookie sheet (to catch any spillover during baking). Bake on center oven rack for 50-60 minutes, or until top is a lightly golden brown. Remove from oven and allow pie to cool to room temperature FIRST, before then transferring into the fridge to chill for a minimum of 3 hours before serving with any optional garnishes such as fresh whipped cream, lime slices or lime zest. Makes one 9″ pie.
