Easy, Healthy Cucumber Rolls

Carefully slice a cucumber into ribbons using a mandolin slicer or large vegetable peeler. Spread a thin layer of your favorite raw hummus down the middle of the cucumber ribbon & roll. Top with a dollop of sun-dried tomato sauce (optional) and serve.

(can be made ahead of time and kept in the fridge until ready to serve)
