Easy Moist Cinnamon Apple Cake
(preheat oven to 350 degrees and lightly oil and flour a 8×8 inch baking dish)
1-1/2 cups all-purpose flour
1/2 teaspoon baking soda
1/2-3/4 teaspoon ground cinnamon
pinch of sea salt
1 cup raw sugar
1 stick of butter (regular or vegan – softened to room temperature)
2 large eggs (you may use an egg substitute as well to equal 2 large eggs)
1/2 teaspoon pure vanilla extract
juice from 1/4 of a fresh lemon
3 large apples, any variety (peeled, cored and diced)
* Powdered sugar for dusting (optional)
Sift the flour, baking soda, cinnamon and sea salt together in a mixing bowl and then set aside.
In a separate mixing bowl, cream together the raw sugar, room softened butter, eggs, vanilla extract and lemon juice until smooth and creamy. Reduce mixure speed and slowly add in the dry ingredient mixture into the bowl with the wet ingredient mixture, and beat until all ingredients are moistened and well combined but be careful to not over-mix.
Spoon batter into your prepared baking dish and bake on center oven rack for 40-45 minutes. Remove from oven and transfer to a wire rack to cool before cutting and serving. Serve with an optional dusting of powdered sugar.
