Dressed Up Banana Vegan Ice Cream
3 large, ripe bananas (sliced and frozen overnight)
1-1/2 tablespoons coconut oil (melted)
1-1/2 tablespoons cocoa powder (unsweetened)
2 teaspoons raw agave nectar
Topping Options: any variety nut butter (slightly warmed), chopped nuts, fresh or dried fruit
Place the sliced frozen banana pieces into a high speed blender and blend until they turn into a creamy, fluffy consistency that resembles soft serve ice cream. Spoon into a bowl.
In a small mixing bowl, whisk together the melted coconut oil, cocoa powder and raw agave nectar until well blended. Drizzle across your banana ice cream and top with any additional toppings you desire (nut butter, chopped nuts, fresh or dried fruit, etc. Makes 3 servings.
