Decadent Stuffed Figs
24 dried figs
1/4 – 1/3 cup crumbled Gorgonzola cheese
1/4 – 1/3 cup fresh grated asiago cheese
pinch of fresh ground pepper
24 toasted pecans
In a mixing bowl, combine the gorgonzola cheese, asiago cheese and fresh ground pepper. Make a slit into one side of dried figs (do not cut all the way through, but almost the entire length of fig). Stuff each fig with approximately 1/2 tsp of the cheese mixture. Arrange the cheese stuffed figs onto a plate or serving platter, top each one with a toasted pecan and press down. Drizzle the figs lightly with the balsamic vinegar just before serving.
