Vegetarian Design Your Own Cream Soup Base (use as a substitute for cream of celery or cream of mushroom soup in recipes)
2 tablespoons butter (salted)
3 tablespoons flour (all-purpose)
1/2 cup vegetable broth
1/2 cup plain milk (regular or non-dairy)
sea salt and black pepper to taste
* This makes a basic cream soup base, and you can add variations such as finely diced mushrooms (as pictured), or finely diced celery, as well as various chopped fresh or dried herbs to suit your recipe needs. Use this as a healthier substitute for called for cream of mushroom or cream of celery soup in your favorite recipes.
Melt the butter in a saucepan over medium-low heat (no higher). Once melted, whisk in the flour and continue whisking until mixture is smooth and bubbling. Remove saucepan from heat and slowly add in the vegetable broth and milk while whisking continuously to keep mixture smooth and blended. Return saucepan to heat and bring to a low boil over medium heat. Stir frequently until mixture thickens and then add in sea salt and black pepper to taste as well as any additional add-ins (minced mushrooms, diced celery, minced herbs) at this time.
