Citrusy Summer Mojitos
8 large sprigs of fresh mint
2 ounces fresh lime juice
2 ounces white rum
3 ounces Campari (may substitute with sweet Vermouth)
club soda or tonic water
fresh lime wedges
Combine the fresh mint, lime juice and white rum in a cocktail shaker and muddle with a wooden spoon until the mint leaves are thoroughly crushed and their aroma is strong. Add in the Campari (or sweet Vermouth) along with a couple ice cubes and shake to chill.
Fill 2 glasses with ice and evenly pour the strained mixture into the two glasses. Top each off with your choice of club soda or tonic water and garnish with a fresh lime wedge. Makes 2 servings.
